Both the stems and the leaves
can be eaten raw or cooked.
The top of the leaves
is dark green and the underside is purple.
'Okinawa Spinach' has a unique flavor
with a faint hint of pine
and adds a nice aesthetic element
to the kitchen.
Also known as cholesterol spinach,
and there are many claims
that lowers cholesterol.
Okinawan spinach is very suitable
for gardening in containers
and even grows well on a windowsill.
The leaves and young shoot tips
can be steamed,
used in stir-fries,
stews and soups.
Just add them to the very end,
if overcooked, they can become slimy.
